Chow Mein Hotdish

This was my grandmother's recipe but I've added some spices and extra veggies. (If you can't find The canned stir fry veggies it includes carrots, celery, red bell peppers, bamboo shoots, water chestnuts, bean sprouts, and baby corn). We like adding extra celery, chestnuts, can mushrooms, and baby corn.

Ingredients
8 servings
2 cupsminute rice
Water
to boil rice
1 lbground beef
1onion
small, chopped
4 Tbspsoy sauce
1 cancream of mushroom soup
or mushroom and garlic soup
1 cancream of celery soup
or cream of chicken
garlic
to taste
salt
to taste
pepper
to taste
Chinese spice
to taste
chow mein noodles
crunchy
1 x 28 ozChow mein mixed vegetables
can, or traditional stir fry vegetables
Instructions
Step 1
Preheat oven to 350F
OvenPreheat
Step 2
Open and drain juices off any canned vegetables
Step 3
Boil rice in water, then drain off any remaining water.
Step 4
Fry ground beef on stove chopping into little bits. Add onion. (If you can't find canned chinese veg also add carrots celery and bell peppers now) Drain off grease when beef is no longer pink.
Step 5
In a baking dish combine soups, seasonings, vegetables
Step 6
add rice and beef to soup mix.
Step 7
bake at 350 for 35 minutes. cool 5 minutes. Top with crunchy noodles.
