Easy tomato rice. The pepper adds a little sweetness to it. Can be served with Greek yoghurt. This recipe easily feeds 2 adults and a toddler

Instructions

Step 1
Fry onions in a little oil until they go opaque
Step 2
Chop or blend tomatoes and pepper
Step 3
Add paprika
Step 4
Add 1tbs tomato puree and fry it off a bit

Add rice (I just guess how much and usually make too much) stir to cover it in red stuff, fry for a minute

Add tomatoes and pepper
Step 7
Top up with chicken stock until there's enough juice to cook the rice and boil off once it's cooked. Add slowly if you're not sure

Cook on low heat for 20 ish minutes, don't stir, just sort of flip it over a bit, else it goes mushy
