Instructions
Step 1
TO START:
- check the dry lentils for stones
- add the lentils to a pot, add eniugh water to cover the lentils - leave to soak for 30 minutes minimum - dump water and replace with 2 cups of fresh water ADD TO BLENDER: - the onion, garlic, oregano, tumeric, ginger, apple cider vinegar, all tomatoes, salt and pepper ONCE BLENDED:
- add blender items to the lentils and water in pot
- bring to boil, once boiling, turn to low, will start to thicken
- cook for 20-30+ minutes until lentils are soft
- when finished cooking, turn stove off, add the olive oil and stir. OPTIONAL FINAL TOUCHES:
- add as much spinach as you want to bottom of the bowl to be wilted by hot soup added on top. - nutritional yeast on top, chili flakes
- optional addition of sliced avo and/or chickpeas on top for extra depth.
