Instructions
Step 1
In this order, place egg yolks, mustard, optional 1/4tsp of cayenne pepper, and then 8 oz of shredded cheddar into blender container.
Step 2
Add whole milk to large saucepan, cover, and bring to a bare simmer. DO NOT BOIL. Add 1 lb quick-cooking pasta and cook to a state of near-doneness (about 1 minute from being done).
Step 3
Drain excess milk into a container with a spout and add pasta back to hot saucepan.
Step 4
While milk is still hot, turn on blender to medium speed and slowly pour in hot milk for about 30 seconds. Add sauce back to pasta in sauce pan and add the remaining 4 oz of reserved cheddar.
Step 5
Let rest for 5 minutes, covered. Season to taste with kosher salt and serve.
