Ingredients

1 headromaine
leaves thinly sliced or chopped
0.5 canchickpeas
drained and roughly chopped
1tomato
medium, diced
1cucumber
small, diced
4pepperoncini
thinly sliced, stems discarded
2 Tbspcapers
roughly chopped, optional
1chicken breast
oven roasted, chopped
Dressing
Instructions
Step 1
Place all the chopped ingredients in a large mixing bowl.
Step 2
Squeeze the juice from 1 lemon over the bowl.
Step 3
Sprinkle with a pinch of sea salt and some black pepper.
Step 4
Start to drizzle with olive oil and red wine vinegar. Mix to coat everything. Keep adding splashes of vinegar, olive oil, salt, and pepper until you get the tang you want. Enjoy!
