Instructions
Step 1
Cook lentils in broth or water until soft about 7-8 minutes
Step 2
In a separate pan, lightly stir fry ginger and garlic until fragrant. Add coconut milk and reduce slightly 1 to 2 minutes
Step 3
Add red Thai curry paste and cook for an additional 2 minutes on medium low heat. Add remaining spices and continue to boil for at least 7 minutes on low heat
Step 4
Combine coconut milk mixture to the cooked lentils, simmer for 10 minutes
