4 cupsrice
day old
3chicken tocino thighs
cooked, small cubes
2 cupskimchi
small rough chop
2eggs
large, scrambled
salt
to taste
Furikake

Instructions
Step 1
Put the cold day old rice in a bowl, and break up the clumps with you hands. Set aside.
Step 2
Scramble 2 large eggs and set aside
Step 3
Cut the cooked tocino into small pieces and set aside
Step 4
Measure out 2 cups of kimchi, then cut it into small pieces. Be sure to save the kimchi juice.
Step 5
Heat up a pan or wok on medium high heat. Add some oil. When the oil starts to smoke, add the egg and quickly scramble. When it is cooked take it out of the pan and set aside. Add the kimchi and its juices into the pan and sautee. Once most of the liquid has evaporated, add the tocino and sautee. Next, add the rice. Mix everything together. Make sure to break up any small clumps of rice. The rice will start to on some color from the kimchi and tocino. Season with salt, and add back the egg. Sautee the fried rice until it is warmed though.
Step 6
Plate the rice in individual bowls or in a communal bowl. Top with furikake and serve warm.
