Instructions
Step 1
Add 3 tbsp satay seasoning to chicken, rub all over, cover and leave to marinate for at least 20 mins, more if you can.
Step 2
Heat tbsp oil in a large pan, add chicken, season and cook over high heat until just cooked and remove.
Step 3
Add onion, cook for 3-5 mins until softened, add garlic, ginger & chilli, mix through, cook for 1-2 mins.
Step 4
Add remaining satay seasoning and stir through. Pour in chicken stock and season well.
Step 5
Pour in coconut milk, bring to a simmer, turn down. Heat and cook for 15 mins.
Step 6
Mix through peanut butter and soy sauce. Blend sauce and return to the pan.
Step 7
Add baby spinach and chicken and heat through. Mix in coriander.
Step 8
Serve with jasmine rice, coriander, wedge of lime & chopped peanuts.
