Ingredients
4 servings
4red onions
unpeeled, each cut into sixths
2carrots
large, cut into 2-inch chunks
1 headgarlic
cloves separated but not peeled
1rib roast
3-bone, trimmed of fat
2 tspkosher salt
1 tspcoarsely ground black pepper
4ciabatta rolls
1 pintdemi glace
frozen, beef or veal
3 ozport wine
1shallot
minced
salt
to taste
pepper
to taste
Instructions
Step 1
Preheat the oven to 475 degrees
Step 2
Arrange the onions, carrots, and garlic in the bottom of a large roasting pan to create a bed for the rib roast. Sprinkle the roast all over with the salt and pepper and place on the bed of vegetables
Step 3
Place the roast in the oven, and roast for about 1 hour. Insert a meat thermometer from the top into the center of the roast to see the degree of doneness you desire. Continue to cook the roast until the internal temperature is 120 degrees for rare, 125 degrees for medium-rare, or 130 to 135 degrees for medium. Remove from the oven and let the beef rest in the pan for 15 to 30 minutes while making the dipping sauce
Step 4
In a 5 quart saucepan heat the shallots, port wine and demi glaze on a low simmer for about 10 minutes, until the sauce is thick and the alcohol has cooked out. Season to taste with salt and pepper
Step 5
Place the roast on a cutting board and slice it as thinly as possible. Place half the meat in the pan with the sauce
Step 6
Cut the rolls in half. Toast, if desired, as it will make the bread sturdier to hold the meat and sauce (or if the bread is day old)
Step 7
Using tongs, take some of meat out of the sauce and place it on the bottom half of each roll. Add some of the dry sliced prime rib. Spoon a little sauce top, close the sandwich, and cut in half. Place remaining sauce in a dipping ramekin next to each sandwich and warm
