Instructions
Step 1
In sm. bowl, combine chili powder, cumin, salt & cayenne; sprinkle half spice mixture over turkey.
Step 2
In skillet, brown turkey (3-4 min. per side) in 2 tsp oil. Add broth & lime juice to skillet: reduce heat, cover, & simmer (15-18 min.) until turkey juices run clear (thermometer reads 170°) turning once.
Step 3
In sm. skillet, sauté onion & jalapeño in remaining oil until crisp-tender; transfer to bowl. Add beans, corn, tomato, salsa, cilantro & remaining spice mixture.
Step 4
Serve turkey with salsa & lime wedges. This goes nicely with black beans and Mexican Rice.
