Instructions

For the Spice Mix

Step 1
-If using whole spices, toast them then grind them to a fine powder. Mix all spices together in a small bowl and reserve.

For the Chicken

-Set the oven to 300*F. -Pat the chicken dry and season all over with the spice mix, salt and pepper. -In a large cast iron or straight sided pan, place the oil and turn the heat to medium high. Sear the chicken on all sides until nicely browned then remove from the pan. Add the onion, garlic, pepper, jalapeno and ginger to the pan, stir well and cook for about 3 minutes, just to barely caramelize it all. -Add the chicken back to the pan, then follow with the coconut milk, pineapple chunks, Worcestershire sauce and soy sauce. Bring this to a boil on the stove, then turn off the heat, cover with a lid and place in the oven for 45 minutes to 1 hour, or until the breasts are cooked through and the rest of the chicken is tender. -Garnish with the scallions and lime wedges and serve with rice!
