Instructions
Step 1
Wash then cut pork belly into long bite-sized pieces. Season with kosher salt and let marinate for 15 minutes at room temperature.
Step 2
Heat oil in skillet over medium heat then mix with flour until dissolved.
Step 3
Add pork belly to skillet and fry until completely golden-brown.
Step 4
Add minced garlic and shallots to skillet and stir with pork belly. Cook for a minute.
Step 5
Add lemongrass and chili peppers to skillet and stir everything together. Cook until pork belly is done.
Step 6
Remove oil from skillet.
Step 7
Set heat to low. Add fish sauce, sugar, and ketchup to skillet. Stir together until sauce is spread/combined evenly.
Step 8
Serve with rice and enjoy!
