Instructions
Step 1
Boil sweet potatoes for 15 minutes in a pot until tender.
Step 2
In a pan over medium heat, heat oil and add onion and carrot, before adding in garlic. Mix in curry powder, 750ml of boiling water, the stock cube and tomato paste.
Step 3
Mix well before adding in lentils. Cover and boil for 20 minutes. Season with salt and pepper.
Step 4
When sweet potato is cooked, drain and mash with butter and salt and pepper.
Step 5
Spoon lentils into individual serving dishes, followed by sweet potato mash on top.
Step 6
Serve.
