Instructions

Step 1
Preheat oven to 160°C(~320°F). Place rice in a saucepan, cover with cold water, bring to the boil and simmer for 20 minutes, or until tender. Drain and set aside.
Step 2
Meanwhile, combine the soy, mirin, honey and chicken in a bowl and allow to marinate for 15 minutes, or longer if you have time.
Step 3
Combine cucumber, vinegar and salt in a bowl and set aside, stirring occasionally.
Step 4
Lay nori on a baking tray. Using a pastry brush, brush with 1/2 tsp olive oil and sprinkle with sesame seeds and remaining salt. Bake for 5 minutes or until crisp. Cut into thin strips using scissors.
Step 5
Heat oil in a wok or frying pan over high heat and cook chicken until golden and cooked through.
Step 6
Add rice to bowl and top with chicken, cucumber and toasted nori.
