Instructions
Step 1
Preheat oven to 400°F / 200°C / Gas 6. Bring a pot of water to a boil.
Step 2
Add chicken breast to a bowl. Season with sea salt, pepper and oil. Rub seasonings into the chicken to evenly coat. Add chicken to a parchment-lined baking sheet and arrange in a single layer. Transfer to oven and bake for 22-25 minutes, or until cooked through.
Step 3
Add pasta to boiling water and cook according to package instructions. Set aside.
Step 4
Heat olive oil in a large nonstick pan over medium heat. When hot, add onion and cook, stirring, for 3-4 minutes, until softened and translucent. Add garlic and cook for 1 minute more, or until fragrant.
Step 5
Add chopped bell pepper cook for 3-4 minutes.
Step 6
Add diced tomatoes, oregano, red chili flakes and tomato paste. Stir to combine and cook for 3-4 minutes.
Step 7
Slice or shred cooked chicken breast. Add to the tomatoes along with the pasta. Stir. Top with sliced olives, season with salt and pepper and garnish with fresh parsley. Portion into meal prep containers.
Step 8
Allow to cool and then cover and store in the fridge.
