Zucchini Bread

This zucchini bread recipe is simple to make! Just mix everything together and pop it in the oven. Zucchini bread is like banana bread, but looks green and is less sweet.
I used Preppy Kitchen's Zucchini bread recipe, with a few modifications of my own.

Step 1
Preheat oven to 350F. Grease an 8x8 baking pan.
Step 2
Grate the zucchini and toast walnuts until browned. Roughly chop the walnuts.
Step 3
In a large bowl, beat together eggs, brown sugar, granulated sugar, and melted butter until well combined.
Dump in the Greek yogurt and vanilla extract

Step 4
In a large bowl, combine the rest of the dry ingredients together (except the walnuts) and whisk just until combined.

Step 5
Pour the wet ingredients into the dry ingredients and mix just until combined. Add the zucchini and walnuts, and fold until everything is fully mixed.
Step 6
Pour batter into the greased pan and bake at 350F for one hour or until a toothpick inserted into the center comes out clean.
