Instructions

Step 1
Clean and slice bitter melon into small strips (cut at an angle) and soak in salt (1tbs) water for 10 minutes (this step is to minimize the bitter taste of melon).
Step 2
Dice garlic and ginger, set aside. Crack and beat eggs well with salt and white vinegar in it.
Step 3
Heat up cooking oil in a skillet; add in egg batter to cook. Transfer to a bowl once egg color changes.
Step 4
Put lard in the heated skillet to melt, add in diced garlic and ginger to mix, further put in sliced bitter melon to cook, season with some salt. Finally add in pre cooked egg to mix, season with some chicken powder, and mix well before serving.
