Instructions
Step 1
Clean and remove all seeds and core inside bitter melon completely, slice bitter melon “shell” into roughly 1/3 inch thin slices, transfer to a plate.
Step 2
Slice garlic thinly, transfer to a container. Remove salted egg yolk from package and smash it into chunks in a bowl, set aside (salted duck egg or egg yolk can be purchased from Asian grocery stores).
Step 3
In a heated pan, add in 2tbs of cooking oil to heat up, further add in salted egg chunks to simmer on medium heat. Gently stir and smash egg yolk as it becomes foamy and extremely aromatic. Remove egg yolk mixture from heat and transfer to a small bowl.
Step 4
In the same pan, add in 2tbs of cooking oil to heat up again. Throw in sliced garlic to stir fry on medium heat until aromatic. Further mix in thinly sliced bitter melon to cook, simmer on medium heat for several minutes until soft with the lid on.
Step 5
Remove pan lid, add in pre-cooked salted egg mixture, and make sure it’s fully mixed in with cooked bitter melon. Season with salt (to taste as egg yolk is already salted), chicken powder and sugar, final garnish with finishing oil, mix everything in before plating. Serve warm with a bowl of rice. Enjoy~!
