High Protein Vegan Egg Salad 😍

✨Ingredients✨
1 block extra firm tofu
1/2 cup finely diced celery
1/3 cup finely diced pickles
1 tsp BLACK salt - this gives the eggy taste
✨Sauce✨
1/2 cup soaked cashews
1 tbsp apple cider vinegar
2 tsp Dijon mustard
2 tsp maple syrup
2 tsp onion powder
1 tsp garlic powder
1 tsp turmeric
1/2 tsp pepper
3-4 tbsp plant milk
** For nut free version sub 1/4 cup vegan mayo for the cashews and take out the plant milk**
✅Mix tofu, celery & pickles together and set aside
✅Mix sauce then add to tofu mixture
Store in the fridge up to 5 days & enjoy!
