Instructions
Step 1
In a pan over medium low heat, drizzle some olive oil, add your chopped garlic and sizzle for a minute.
Step 2
Add your cleaned and chopped mushrooms, season with salt and pepper, cover with a lid and cook for 15 mins, stirring occasionally.
Step 3
Blend half of your mushrooms with Parmigiano cheese, half of your parsley and a drop of boiling water for a minute or until creamy.
Step 4
Add your cream back to the pan with the rest of the mushrooms and simmer for a couple of mins.
Step 5
In the meantime, boil your pasta in some salted water, drain and it to your sauce, adding a drop of pasta water and the rest of your parsley to make it super sexy!
Step 6
Serve with some grated cheese on top!
