Instructions
Step 1
1. Peal and finely chop your onion, celery and carrot.
Step 2
2. Add 3 tbsps olive oil in a casserole over medium-low heat, then add your chopped veggies.

Cook slowly for a couple of mins or until softened, stirring occasionally.

3. Peal and dice your potatoes into small cubes then add them into the casserole. Cook for 5 more mins.

4. Add your tomato purée along with 2 ladlefuls boiling water.
Step 6
5. Bring to a boil and cook everything for about 20/25 minutes or until the potatoes are soft.

6. Season with salt.

7. Add your raw pasta into your sauce along with ladlefuls of boiling water and cook for the time indicated on the package.
Step 9
8. In the meanwhile, dice your Provola cheese and grate your Parmigiano. Season with a pinch of pepper.
Step 10
9. Once the pasta is fully cooked, remove your casserole from the stove, then add your cheeses.
Step 11
10. Serve with a drizzle of olive oil on top. Buon appetito!
