Spicy Cajun Pork Burgers

Ingredients
4 servings
2 tablespoonssweet red piquante peppers
chopped, drained
¼ cupmayonnaise
burgers
2 tablespoonschili sauce
¼ teaspooncajun seasoning
0.5 lbground pork
0.5 lbbulk andouille sausage
or chorizo
4 ozslices monterey jack cheese
4burger buns
split
4 piecesleaf lettuce
small
Instructions
Step 1
Heat gas or charcoal grill.
Step 2
Pat chopped peppers with paper towels to remove excess moisture.
Step 3
In small bowl, mix mayonnaise and peppers, set aside.
Step 4
In medium bowl, mix chili sauce and Cajun seasoning.
Step 5
Crumble pork and sausage into chili sauce mixture; mix gently just until combined.
Step 6
Shape mixture into 4 patties, about 12 inch thick.
Step 7
Place patties on grill over medium heat.
Step 8
Cover grill; cook 6 to 10 minutes, turning once, until thermometer inserted in center of patties reads 160°F.
Step 9
During last 2 minutes of cooking, top each patty with cheese.
Step 10
Cook until cheese is melted.
Step 11
Spread sweet pepper mayo on cut sides of buns.
Step 12
On bun bottoms, place lettuce and burgers: cover with bun tops.
