Start by slicing the green onions while separating the green and white parts.

Next mince about four cloves of garlic.

Over an empty bowl crack open 3 eggs adding only the egg whites to the empty bowl, while adding the egg yolks to a bowl with 3 cups of day old rice.

Next gently mix in the egg yolks into the rice. Add a pinch of salt to the egg whites then give that a whisk.

Add some oil to a skillet and cook the egg whites, gently scrabbling them for about a minute.

Move to the side, add a bit more oil, then add the white parts of the onions, the garlic, cook for another minute, then mix in the egg whites.

Right after add in the rice, folding it all together, while adding white pepper, sugar, and a teaspoon of salt.

Cook for a few more minutes, turn the heat off, add the green parts of the onions, add a drizzle of sesame oil, give that a mix, and enjoy.
