Instructions

Step 1
1. Blend the bunch of cilantro, garlic cloves, 1/4 onion, juice of 2 lemons, 1/4 c water, and 2 tbsp salt.
Step 2
2. Chop chicken into 1 inch squares and top with the cilantro marinade.
Step 3
3. Marinate for a minimum of 30 minutes. You can marinate overnight for maximum flavor.

4. Chop the remainder of the onion and 2 bell peppers.
Step 5
5. In a greased pan, add the marinated chicken and cook for 5 minutes.
Step 6
6. Add in the bell peppers and onions. Combine well and cook for 10-15 minutes or until the onions are translucent.
Step 7
7. Add seasonings of choice.
Step 8
8. Assemble bowls with white rice or side of choice. Each bowl will have 1.25 c chicken mixture and 1 c rice.
