½ cuppineapple juice
from the pineapple rings
4 tablespoonsolive oil
2 tablespoonssoy sauce
2limes juiced
2 clovegarlic
minced
2 tablespoonshoney
1 teaspoonhot sauce
2 lbshrimp
large, peeled and deveined
26 ounceskielbasa
cut into 1-1/2 inch pieces
1can pineapple rings
cut into 1-1/2 inch pieces
2red bell pepper
cut into 1-1/2 inch pieces
2orange bell pepper
cut into 1-1/2 inch pieces
2green bell pepper
cut into 1-1/2 inch pieces
1red onion
cut into 1-1/2 inch pieces
Instructions
Step 1
Whisk together the pineapple juice, olive oil, soy sauce, lime juice, garlic, honey, and hot sauce. Place the shrimp into your large bowl and pour the marinade over the shrimp. Place the lid on the container and refrigerate for at least 30 minutes.
Step 2
Once shrimp are marinated, toss them and their marinade with the kielbasa, pineapple, bell peppers, and red onion onto a rimmed baking sheet.
Step 3
Broil for 6-8 minutes, and then switch to 425F oven for 15-20 minutes or until shrimp is pink and opaque stirring once during the cook time.
