Chicken Chili - Tomato with Beans

Instructions

Step 1
dice onions celery and garlic. add to pot with oil and salt. cook til translucent.
Step 2
add chicken, cook until browned. dice bell pepper and add to pot. add a little chicken broth to deglaze.
Step 3
once bell peppers are soft, add in tomatoes and green chiles. add in half of the chicken broth and all of the spices.
Step 4
simmer hard for 30 minutes, adjusting spices along the way.
Step 5
after 30 mins, add rest of chicken broth and let sit off heat for 30 mins
Step 6
serve :)
