Instructions
Step 1
Wash the shrimps and season with salt, garlic, pepper and lemon juice, let marinate.
Step 2
In a pot bring the maniok pieces to a boil together with the bay leave and one onion cut in rings.
Step 3
When the maniok is soft add the coconut milk.
Step 4
Let cool for a bit and blend with a blender.
Step 5
In a frying pan heat the olive oil and add the second onion (diced). Let the onions caramelize.

Add the shrimps to the pan and fry.
Step 7
Add the tomatoes, cut up coriander leafes, and diced bell peper and let cook for a few minutes.
Step 8
Add the palm oil and tomatoe-shrimp mixture to the purreed maniok and stir well. (Add enough palm oil to make the Bobó orange-y)
Step 9
Bring the Bobó to a boil and it is finished.
