Yup, the self-proclaimed peanut butter addict is at it again. This time, in sushi! I can confirm that the combination is elite. Plus the chickpeas add a pack of protein and creaminess, making this sandwich everything you could want in a lunch and more.

Can, Drained and rinsed
2 TbspPeanut Butter
1 TbspTamari
1 TbspLime Juice
0.5 TbspWater
0.5 TbspRice Malt Syrup
1 tspcurry powder
0.25 TspGarlic Powder

Sushi Sandwich
Instructions
Step 1
Mash together all peanut chickpea ingredients until desired consistency.
Step 2
Assemble the sushi sandwich by first spreading rice in the centre of a nori sheet. Top with peanut chickpeas, spinach, sushi rice and finally a smaller sheet of nori.
Step 3
Wrap like a present. Flip and wrap in cling wrap. Set in the fridge for 30 minutes, slice and enjoy.
