Step 1
Salt both side of chuck roast with kosher salt. Let set at room temperature for 30 minutes.
Step 2
Add oil and butter to carbon steel or cast iron pan on medium high heat. Cook each side of roast for 6 minutes per side to get a nice crust. Once done add your black pepper on both sides.
Pressure Cook Instapot
Step 3
Add trivet and 1 cup of water. Place roast on trivet pour juices from pan over roast. Cook on high pressure for 90 minutes. Once completed leave lid on for another 90 minutes. Remove roast and trivet from instapot.
Step 4
Add potatoes and carrots and celery. Cover with water add your bouillon now if you want it. Pressure cook.for 10 minutes with natural release. Once cooked add roast on top and serve.
