The Coconut Tree's Veggie Kotthu
Kotthu is a fine example of Sri Lankan hybrid food, and is served all over the country as luxury street food. It's made with finely chopped roti, cooked with egg, vegetables, and sometimes meat. Here is a simple recipe for The Coconut Tree's popular veggie kotthu, a sunshine-y bowl of Sri Lankan flavour, whatever the weather. The Coconut Tree started as a bar and restaurant founded by a group of Sri Lankan friends in 2016, serving delicious Sri Lankan street food. In April 2022 they opened their new Birmingham branch on Gas Street, and kindly submitted this recipe for the Cook the Commonwealth Project!

Instructions
Step 1
Heat a wok until hot. Add the coconut oil and swirl the wok until it covers the base.
Step 2
Add the onion, salt, chillies, black pepper, and eggs.
Step 3
Toss and cook until the egg has slightly scrambled, then add the roti, carrot and leeks.
Step 4
Toss the pan rapidly on high heat for several minutes, until the vegetables are cooked but still crisp.
Step 5
Remove from the heat and serve immediately.
