I love making different breakfast sandwiches everyday, but this is by far my favorite. It is so refreshing and delicious. I will note though, the recipe makes 2 sandwiches. Also, I’m sorry the picture isn’t great.

Instructions
Step 1
Cut open avocado and mash well. Add in a pinch of salt and pepper to taste. Add lemon juice and hot sauce of choice or ground jalapeño pepper. Mix well and place in the fridge until later.
Step 2
Dice hard boiled eggs and mix with mayonnaise, salt, pepper, and hot sauce of choice. Refrigerate until later.
Step 3
Toast bread in toaster oven with a bit of cheese sliced on top. I used horseradish jack cheese for some extra spice. While toasting, slice tomato and sprinkle a pinch of salt on top.
Step 4
Spread avocado mixture on one slice and egg mixture on the other. Layer tomato slices in the middle. The layers should be distinguishable as egg, tomato, avocado. Should make 2 sandwiches. Slice in half and serve immediately.
