Instructions
Step 1
Heat water on wok until it boils. Add the clams and remove as they open
Step 2
Heat the oil in the wok. Add the XO sauce, garlic and Chinese sausage until fragrant
Step 3
Add the chicken stock, sugar and soy sauce and simmer for 1 minute
Step 4
Add back the clams and sautée for 3 minutes
Step 5
Mix the corn starch with two tablespoons of water. Add to the sautée along with the sliced scallions
Step 6
Serve over warm, seasoned vermicelli noodles
