Ingredients
4 servings
2 tablespoonsextra virgin olive oil
1 poundextra-lean ground turkey
free-range, you also can use grass-fed ground beef
1 teaspoongarlic clove
minced
½ cuponions
diced
½ cupyellow pepper
diced
1 ½ cupssweet potato
diced
salt
freshly ground black pepper
red chili flakes
optional
½ cupshredded mozzarella cheese
if you ' re doing whole 30 or following paleo diet, don ' t add cheese ))
fresh parsley
for garnishing, optional
Instructions
Step 1
Cook sweet potato in microwave for 10 minutes until soft, cool slightly and cut
Step 2
In a cast iron skillet, heat the olive oil over medium-high heat.
Step 3
Add the ground turkey and garlic. Use a wooden spoon to break up the turkey as it cooks. Stir occasionally, and cook for about 5 minutes.
Step 4
Add the onions and yellow peppers, and cook until the onions are soft.
Step 5
Add sweet potato, red chili flakes, salt, and pepper.
Step 6
When the sweet potatoes are tender, add the shredded mozzarella cheese, and cover to melt the cheese. Serve and Enjoy!

Under 30 minutes
Added extra pepper in the end. Was good but needed something more. Made it without cheese so that could be all the difference.

Others advice and added Worcestershire sauce and extra seasoning to the meat I used a garlic salt pepper onion powder blend. I also added kale for a little extra greenery. I think it was delicious would do again.
I ended up doing the sweet potatoes in my instant pot and then using the saute function for the rest of the meal super easy.
