Step 1
Heat the oven to 180°C/gas 6. Put the salmon fillets spaced apart in the middle of a large square of baking paper and put on a roasting tray. Divide the stem ginger between the tops of each fillet and fold up the sides of the parchment ready to seal. Drizzle the maple syrup and soy sauce over the fillets, sprinkle over the chilli, sweet red pepper, salt and pepper and then seal the parcel. Cook for 15 minutes or until just cooked through.
