Thai Carrot and Peanut Salad

Instructions

Step 1
Make the spicy peanut sauce by combining all the ingredients the bowl of a food processor and whizz together. Alternatively, combine the ingredients together in a small bowl and whisk. Add a splash of water if it is too thick - you want the consistency of pouring cream. Season with salt to taste
Step 2
Coat the tofu slices in the olive oil and season well with salt and pepper. Heat a large frying pan over a medium heat, add the tofu slices and fry for 3-4 minutes on each side until golden. Leave to completely cool then slice into thin strips
Step 3
Using a mandoline, grater attachment on your food processor or box grater, grate the carrot into thin strips
Step 4
Combine the carrots with the bean sprouts, kaffir lime leaf and herbs and toss well. Add the peanut sauce and toss again. To serve, top with peanuts
