Step 1
simmer vinegar, water, salt, sweetener

while simmering, slice red onion. additions and spin offs: garlic, cucumber, red pepper flakes/jalapeños, spices.
Step 3
put sliced onion and accoutrements in a pint mason jar or similar container.
Step 4
pour hot pickling liquid over onions into jar, seal jar and give a shake and/or pack onions down with a spoon, making sure all are submerged.
Step 5
let marinate for 30+ mins, store in fridge up to two weeks.
