Pickled Red Onions
Love making pickled red onions and having them in the fridge, I put them in sandwiches, on salads and my favorite way to eat them is with white rice and chicken.

Step 1
1. Make the brine- by stirring together the water, vinegar, salt and sugar in a saucepan and boil on high heat. Stir until the sugar and salt dissolve.
Step 2
2. Peel and thinly slice the onions, separate the layers and put them in a mason jar. Place the oregano and chili flakes on top.
Step 3
3. Next pour the hot brine on top until the onions are covered. Set aside on the counter to cool to room temperature, then put the lid on and store in the fridge. Your pickled onions will be ready to eat once they're bright pink and tender about 1 hour.
