Ingredients

100gwholewheat penne pasta
1 Tbspolive oil
1onions
chopped
270gprawns
deveined, set aside
20gbutter
1 tspsalt
1 tspgarlic paste
1red bell pepper
deseeded and chopped
¼ tspfish seasoning
¼ tspcajun spice
black pepper
salt
to taste
1red chilli
deseeded, optional to use more
0.5tin of chopped tomatoes
1 tsppaprika
50ggarlic & herbs soft cheese
to add at the end
Coriander
chopped to decorate
tin sweetcorn

Instructions
Step 1
Cook the pasta in salted water for 10-12 mins until al dente. Meanwhile, heat the oil in a medium pan. Add the sliced onion and chopped pepper and fry, stirring frequently for 10 mins until golden.
Step 2
Stir in the garlic and spices, then tip in the tinned tomatoes, half a can of water, the sweetcorn and crumbled vegetable stock cube . Cover and simmer for 15 mins.
Step 3
Meanwhile place butter in your frying pan, or wok, stir-fry prawns in the butter for 3 to 4 minutes on each side. Add salt, remove from pan and set aside.
Step 4
Add the prawns to the sauce and simmer for 2 to 3 minutes.
Step 5
Drain the penne and toss into the sauce with the cream, and chopped coriander. Stir well and allow the pasta to absorb all the awesome flavours.
Step 6
Spoon the pasta into bowls.
Garnish with fresh coriander and black pepper before serving.
