Instructions

Step 1
Wash the rice until the water runs clear.
Step 2
Heat the extra virgin olive oil in a large sauce pan with a lid until oil is shimmering but not smoking. Add onions and cook for about 3 to 4 minutes until translucent.
Step 3
Add garlic, mustard seeds, bay leaves, lemon zest, fry until the seeds start popping then stir in the cashew nuts and the turmeric. Fry for another min.
Step 4
Stir in the rice, stock and lemon juice
Step 5
Adjust the seasoning and water, bring it to a boil then let it simmer until cooked
Step 6
garnish chopped parsley.
