Instructions

Step 1
Finely dice the tomato and onion.
Step 2
Cut the stem off of the zucchini. Using a spiralizer, spiral cut the whole zucchini into “zoodles.”
Step 3
Place zoodles on a few paper towels then pat dry with more paper towels to remove excess liquid.
Step 4
In a frying pan on medium to medium high heat (about 6), heat up some avocado oil. When hot, add tomato, onion, and garlic. Salt and pepper to taste. Cook for about 5-7 min, or until veggies are tender.
Step 5
Add zoodles (and more salt and pepper if desired), and cook 3-5 min more, when zoodles are soft but not yet soggy. Zoodles and onions should still be somewhat crunchy.
