Instructions
Step 1
Place a pan on a medium heat and add the olive oil.

Add the onions and season well with salt. Slightly lower the heat and cook gently for 10 minutes. Once softened add the garlic and cook for a further 15 minutes until the onion and garlic are caramelised.

Step 3
Remove the onion and garlic from the pan. Slice the sausage open and add the meat to the pan removing the skin. Increase to a medium heat and cook until the sausages are broken down and golden. Return the onions and garlic to the pan, add the paprika then deglaze with the wine.

Add the cream and Parmesan rind and cook out for 5-10 minutes.

Cook the pasta until it's al dente, drain and reserve 1 cup pasta water
Step 6
Add the pasta to the sauce and throughly coat. Add pasta water as needed to thin sauce
Step 7
Serve up and finish with a good amount of grated Parmesan
