Instructions
Step 1
In small saucepan, add 1/2 teaspoon turmeric, half the scallions.
Step 2
Cook on low heat until fragrant, about 1 minute.
Step 3
Add rice, broth, and seasoning.
Step 4
Raise heat to a medium high, bring to a boil, cover & reduce heat to a simmer for 15-20 minutes, or until rice is tender.
Step 5
In separate bowl, add tomatoes, cilantro, remaining scallions, salt, and pepper.
Step 6
In another bowl, add sour cream and a squeeze of lime juice.
Step 7
Add water, one teaspoon at a time until reaches drizzling consistency.
Step 8
Mix cumin and remaining turmeric in a small bowl.
Step 9
Place fish, skin side down, in frying pan.
Step 10
Season fish liberally with salt and pepper.
Step 11
Add cumin & turmeric mixture on top of salt & pepper.
Step 12
Fry in oiled frying pan on medium high heat, skin side down, for 4-5 minutes, until skin is crispy.
Step 13
Flip fish and cook 2-3 minutes more.
Step 14
Fluff rice.
Step 15
Serve fish on top of rice, add tomato mix and drizzle sour cream lime over.
