Sun-dried tomatoes definitely don't get enough love. They're bursting with rich, concentrated tomato flavor and get the job done when you need a flavor base. This pasta takes advantage of exactly that by keeping it simple and relying on the tomatoes to carry the pasta.

Step 1
1. Chop the sun-dried tomatoes (if not julienned) then add to a pan on medium heat along with half the oil from jar.
Step 2
2. Once oil is sizzling, add garlic and mix. Fry garlic and sun-dried tomatoes for 3-4 minutes.

3. Add salt, pepper, and basil and mix well.
Step 4
4. Once fragrant, add coconut milk + nutritional yeast and mix until the color turns light orange.
Step 5
5. Place on low heat and cover with lid for 15 minutes to allow the sauce to develop.
Step 6
6. In a separate bowl, boil water and a pinch of salt then add your pasta. Remove when al dente but save pasta water before straining.
Step 7
7. Uncover the sauce and check to see if it’s reduced. Add pasta water to loosen up the sauce and add spinach.
Step 8
8. Raise heat to medium and allow the spinach to shrink before adding pasta. Top with chili flakes & vegan cheese.
Step 9
9. Remove from heat and enjoy!
