Instructions

Step 1
Making the bean mix, add onion & garlic (chopped), mixed beans, and tomatoes to a heated saucepan (with cooking oil). Continue to cook until mix thickens up. (Add 1tsp Cumin if you have).
Step 2
In another pan, or oven grill, cook chopped chicken strips (add seasoning of choice-I like smoked paprika).
Step 3
Slice up cabbage, spinach, carrot, and coriander in a large bowl. Whisk honey, lime juice, and 15ml oil together and toss in with salad mix.
Step 4
In a serving bowl, add in salad mix, chicken, quarter avocado slices, bean mix, and rice. Serve with Yoghurt & extra coriander.
