Step 1
1. Roast the tomatillos, onion, garlic cloves, & jalapeños using your preferred method. I air fry at 360* F for 11 minutes.

2. Blend the roasted vegetables along with 1/2 c water, salt (or chicken bouillon) to taste, and cilantro.
Step 3
3. Chop green onions in half and 8 bacon slices into bite size pieces.
Step 4
4. Cook the bacon in the pan for 3-4 minutes. Then add the green onions and cook for an additional 4 minutes or until they are cooked through.
Step 5
5. Remove the green onions and bacon pieces.
Step 6
6. In the same pan, brown the meat for 5-6 minutes. Season with 1 tsp salt and pepper to taste.
Step 7
7. Bring the heat down and add the green salsa and 2 c of beef broth. Cover and cook for 10 minutes.
Step 8
8. Add the bacon and green onions back into the pot with a handful of cilantro and seasonings of choice. Cover and cook for an additional 10 minutes.
Step 9
9. Divide into 4 equal servings. Each bowl will get 1.5 c meat and 0.5 c strained beans. The remaining “jugo” should be evenly divided (about 0.75 c for each bowl).

10. Add toppings of choice including chile, avocado, and/or more onion and cilantro.
