Vegetarian Sweet Potato Tacos

Vegetarian Tacos with chipotle seasoning are bound to be your new favorite. A Roasted Mix of creamy Sweet Potatoes, Black Beans, Red Onions with citrusy lime juice and creamy avocado sauce, all wrapped up in a small charred soft corn tortilla.

Instructions

Step 1
Preheat oven to 200C. Line a baking tray with baking paper. Combine the sweet potato, red onion, 1 tbsp olive oil and chipotle seasoning in a bowl. Toss to coat.
Step 2
Spread out to arrange in an even layer. You don't want any potatoes overlapping or you'll end up with steamed instead of roasted. Flip after 10 minutes cooking for a total of 15 - 20 minutes.
Step 3
Transfer to a pan over medium heat and add 1 tbsp olive oil, add the black beans, adjust seasoning. Cook for a few minutes, mixing occasionally.
Step 4
Meanwhile, to make the avocado sauce, In a blender or food processor combine avocado, lime juice and 1 tbsp olive oil. Blend until smooth, season and set aside.
Step 5
Heat the tortillas in a skillet, in batches, for 10 to 20 seconds each side or until lightly charred. Wrap in a clean towel until ready to eat.
Step 6
Top tortillas with sweet potato mixture, avocado sauce, squeeze of lime juice and cilantro. Serve with lime wedges.
