Instructions
Step 1
If you don’t have a microwave, preheat your oven to 220°C/200°C fan/gas mark 7 for the bao buns. Thinly slice the shiitake mushrooms. Slice the sugar snap peas in half lengthways. Juice half of the lime and cut the other half into wedges.
Step 2
In a small bowl, combine the sriracha, mayonnaise and water (see pantry). Season with salt and pepper.
Step 3
In a medium bowl, combine the coleslaw mix, sugar snap peas, lime juice, olive oil (see pantry) and half of the soy sauce. If you’d like to, season with salt and pepper.
Step 4
Heat a large frying pan on medium-high heat with a drizzle of oil. When hot, add the sliced mushrooms and sliced shiitake to your pan. Cook until softened, 2-4 mins. Reduce to heat to medium-low and add the hoisin sauce and remaining soy sauce. Stir to coat and thicken the sauce, 1-2 mins
Step 5
Meanwhile, if you’re using the microwave, place the bao buns on a plate and microwave, 750W: 1 min 30 secs / 900W: 1 min. If you’re using the oven, place the bao buns onto a baking tray. Bake on the middle shelf until warm and fluffy, 2-3 mins.
Step 6
Load the bao buns with the hoisin mushrooms and sriracha mayo. Serve the slaw alongside and garnish with a lime wedge.
