Halibut with Tomato Veggie Sauce

Step 1
Slice the tomatoes in half and then in quarters. Peel and chop the eggplant, garlic and onion. Slice the red pepper. Sprinkle garlic powder, onion powder, salt and pepper on both sides of the fish. Pass the fish through the flour and shake off any excess. Heat olive oil over medium heat and fry the fish for a few minutes till golden. Set aside. To the same pan add more olive oil if needed, heat, and add the tomatoes and all the vegetables. To that add the olives, capers, basil, oregano and pepper. Note: Taste before adding the salt to the sauce as the olives and capers could make the sauce salty. Transfer the fish to a plate. I like to serve on a bed of Barley, Farro or Rice and pour the sauce on top. Enjoy!
