Taco Casserole with Chillies

Instructions

Step 1
Preheat oven to 190c. Caramelize onions and set aside. Brown mince and drain fat. Dissolve taco seasoning in 3/4 cup of water and pour over mince. Bring to a boil to thicken slightly and reduce and add refried beans. Stir until combined.
Step 2
Grease 2 qt casserole dish and use half the taco shells, broken into bite size pieces, and layer in bottom of dish.
Step 3
Then layer beef/bean mixture over the chips. Top with chilies and onions and cheese. Repeat layers.
Step 4
Bake for 20-25 minutes until browned and bubbly. Add dash of Cholua and green onions on top. Serve with desired accompaniments on the side: Sour cream, fresh lime, coriander sauce, tomato, avocado.
Step 5
If making more servings increase mince and increase water to 1cup or just use double seasonings and water, and use a 9×12 casserole dish
Step 6
Use 1840 Monterey Jack which melts perfectly and tastes like the real thing. Alternatively, can use a mild cheese mixed with Mexicana for an extra kick. Aldi has thick sour cream similar to Daisy.
Step 7
1840 cheese can be purchased at Waitrose or Home Bargains in Twickenham.
