Spanish Lentils soup (pressure cooker)

Instructions

Step 1
Stirfry the finely chopped garlic and onions in the pressure cooker pot. Add other vegetables and stirfry slightly until they gain a bit of colour. Optionally you can add a chili that imitates the chorizo flavour by adding a touch of spicy. If you don't like spicy, add it without cutting. If you like spicy, chop it fine and add it with the rest of the ingredients.

Step 2
Add the lentils on top of the vegetables in the pressure cooker and cover everything with water. Add salt and pepper to taste. Add miso for a bit of umami flavour. Hot chilli powder can give it a chorizo aftertaste. Add one or two bay leaves. Close the pressure cooker and heat until the pressure goes to maximum. Stop the fire and let it cool with natural pressure release.

Step 3
Fry paprika in a separate pan for a few seconds and add on top of the cooked stew for extra flavour. You can also add finely chopped garlic to this step and the smell is amazing. Mix it in and it's ready to serve.

After the cooking is done, you may want to add some water to make the lentils to your liking, some people prefer them more liquid and others more dense. Serve with fresh bread and add some chopped parsley on top to taste.
